A lot of interesting work has been done on acquisition of songs by birds.
There are remarkable parallels between birdsong acquisition and human
language acquisition (plenty of differences, too). But this area might be
interesting for you to look into, because along with psychophysical and
"sociological" experiments, there is also a lot of detailed neuroanatomy
and electrophysiological data as well.
