Somewhere / somehos in your messages I'm missing the issue.

If I understand the question, you are asking how Bacillus contributes to 
food spoilage.  THen you partially answer by mentioning an array of enzymes
they produce which would contribute to spoilage, but say you can't find 
anything about these in food texts.  I'm lost.

Please try to restate the question and issues again.
