CO2 measurement

In the document of CROW and MARTLEY about an enzymic method for CO2 in
cheese, it is necessary to centrifuge but we have no indication about the
RPM. Does someone have an idea?
Moreover, we have to work under an N2 atmosphere. Is it really necessary or
can we work without this condition and with a blank?
