MICROBIAL STRESS AND RECOVERY IN FOOD

OBJECTIVES OF THE SYMPOSIUM

Cornouaille is a well established Food Science research place. Microbiology
is the main topic conforted by the organisation of scientific meetings. A
first congress was held in Quimper in 1997 on +AKs- Predictive Microbiology
Applied to Cold Food Preservation. +ALs-. The second symposium on this topic,
entitled +AKs- Microbial Stress and Recovery in Food. +ALs- aims to bring together
scientists who are currently working in different aspects of microbial
stress and viability, especially in the area of food science and technology.
Some sessions will be assigned to basic research regarding molecular,
cellular and metabolic mechanisms of stress and recovery. Other sessions
will be assigned to more applied research regarding food industries,
starters, yeast and bacterial viability. Heat treatments and other
preservation processes have to take into account microbial stress, this
topic will also be assigned.

SCIENTIFIC PROGRAMME

Session 1 : general biochemical and molecular aspects of stress,
Session 2 : basis of thermal stress (cold and hot),
Session 3 : basis of non thermal stress,
Session 4 : effects of environmental factors on the viability of
microorganisms,
Session 5 : stress and viability of starters, fermentative yeasts, fungi
and bacteria,
Session 6 : taking into account stress in modelling preservation treatments,
Session 7 : hurdle concept,
Session 8 : methodologic aspects of stress.
