Greetings,
There is a viticulture and enology home page at U. California Davis. 
When I was at Davis there was work being done on the malo-lactic
fermentations by one of the profs there. Don't remember who since I was
over in the Vit part.  Don't remember the URL but should be easy to find
in YAHOO.
