Any book on biochemical lab techniques, eg. Cooper or Richter, will
cover these topics. Several volums of "Methods in Enzymology" deal with
protein purification and give a good account of the various techniques.
Also very useful are the booklets on protein chromatography and
electrophoresis published by the company Pharmacia. Although written to
promote their products, these booklets contain a lot of generally
applicable information. Last time I looked, they had them as pdf-files
on their web site.
