Inside Out

I was wondering if anyone would like to comment on the plausibility of an
inside-out protein, i.e., hydrophobic exterior and polar interior, for
stability in a nonaqueous environment. Is there insufficient order in
organic solvents to make the entropic contribution of burying the polar
residues drive folding? Do you think we know enough about structure (or
will we ever know enough) to be able to synthesize such a creature?

just a thought on the bike ride in.
